what determines the order of the pinned posts in my blog menu? i tried changing the date but that doesn’t seem to change the order…

I think the order is the one by which you pinned the posts. The first post you pinned will be the first to appear, and so on.
If you want a specific order, you’ll have to unpin your posts then pin them in the desired order.
That’s what I did on my blog, in any case.
